Today was my first day in this practice week, we entered the kitchen at 8 a.m as usual. For this week we will learn about ala carte. We did oneline then Mr Ichal came and explained about the menu of Ala'carte start from appetizer till dessert. Ala'carte menu are :

Before starting, we were divided into several sections : cold kitchen, main kitchen, pastry and bakery, and the last is butcher. Each section has the responsibilities for the menu. Cold kitchen will handle appetizer and sauce, main kitchen will handle main course, pastry and bakery will handle dessert and bakery products, and butcher will handle meat, fish and poultry. And I got main kitchen section.
Then we moved directly to do preparation with clean and good. We shall use utensils with its function, my group only prepare the ingredients for main course and there also ingredients for main course prepared by appetizer group and when everything done. We did general cleaning and wait for the floor to dry, and it didn't take time to long for Mr Ichal advised us before we went home.
