Today's yapss have entered the 3rd day in the a la carte menu, today I arrived early in the morning not the same as yesterday's day, today I came at 6:00 a.m., and the senior semester of the 5th semester b, today must be better from yesterday, at 6:30 we were oneline and immediately rushed to do with their respective duties, I got a part of making carbohydrates, first I took all the preparedness of a cold kitchen because of the cold kitchen that was the preparekan, the carbohydrates that I got were all using the main ingredients of potatoes, and carbohydrates made are
1. Dhuchesse potatoes
2. Colcannon
3. Gratin dauphinoise
That is the carbohydrate menu that I handle, the first thing I make is a steam potato and then make a duchesse potato and then colcannon and finally it is all cooked and when it's finished put it in bain marie so the food stays warm, then I help my friends to prepare everything condiment for saute and palatting, at 1:00 p.m. we rested and performed the midnight prayer, after that we returned and opened the restaurant all rushed in their respective sections, there were those who were fry, blanch and some were saute and there were also grill or platting all in busy with their respective sections
After everything was finished and sold all the food and restaurant was closed, we immediately rushed to clean all the areas that had been used for all preparations. All were stored back in the chiller or in the freezer, at 3:30 p.m. we headed straight for prayer for midnight prayer, after all finished we also took a rest before doing general cleaning, now here I have understood the system in ala carte how is it working and I also understand about ala carte, thank you, you supervisor today son, grand, ka muhlis and ka aldi, hopefully the knowledge give to us useful for us, and at 17: we all do general cleaning and after that we go home to each other.
